Cheers to National Kale Day!
Today is a wonderful day. Not only is is the first day of October (one of my favourite months), but it is also #NationalKaleDay.
We love kale at Veseys for about a million reasons but I will just give you a few...
*Kale is easy to grow and cold hardy.
*Kale not only grows well in garden beds, but can also be planted in raised beds and containers.
*Kale is super good for you. It is high in calcium, high in fiber, high in iron, vitamin A, C, & K, and is filled with antioxidants.
*Kale can be used so many different ways, in different recipes. Smoothies, omelets, pasta, salads, pesto, kale chips etc.
One of my favourite ways to consume kale is to drink it. I am a big fan of juicing. It's a great way to use some left over kale and other veggies so that you aren't wasting any food from your garden. Alyssa's Oh Kale Yeah Juice
2 large leaves of kale (any variety of your liking works great)
1 large cucumber
2 stalks of celery
Some romaine lettuce (optional. Gives it a sweeter taste)
1 Green apple
1 inch of fresh ginger
Juice of 1/2 lemon (optional)
Thoroughly wash all of your produce.
Cut apple into 4 for easier use.
Cut off peel of lemon.
Put produce through juicer.
Pour juice into glass and enjoy!
Note: I like to make my juice the night before and have it nice and cold in the morning. If you do this, make sure you store in an air tight container and fill it to the lid so that it does not oxidize. Drink within 24 hours.
